Achiote Seared Shrimp with Mango, Mexican Papaya and Avocado
Ingredients
Yield: 1 Serving
3 oz - rock shrimp
2 tsp - achiote marinade
1/4 Haas avocado pitted and peeled
5 slices mango
2 oz - Mexican papaya
1 juice from 1 lime
1 tsp - chiffonade fresh mint
1 tsp - pomegranate seed
Instructions:
1. Saute the shrimp in the achiote marinade until just cooked through. Let cool.
2. Dice the papaya and toss with lime juice and mint.
3. Arrange the papaya in the middle of the plate.
4. Place the shrimp in the cavity of the avocado
5. arrange slices of the mango around the plate.
6. Sprinkle with pomegranate seeds.
