This is a fun and unusual salsa that calls for very sweet pineapple for a hot, juicy and sweet salsa to be used with chicken, grilled meats or duck. If you don’t feel like preparing a grill for the pineapple you can dice it and then sauté it over medium heat about 20 minutes until it sweats much of it’s juice and releases and browns the sugars. Save all the juices to stir into the salsa.
Ingredients
Yield: 5 Cups
2 - pineapples, peeled, cored and cut 1/6ths lengthwise
1 Cup - fine diced red onion
2 Cups - fine diced scallion
1/2 Cup - seeded and fine diced serrano chile
1 Cup - chopped cilantro leaves

Grill the pineapple to caramelize the sugar let it cool and dice.
